Every civilization develops increasingly sophisticated methods of growing, cultivating, preparing, and preserving food and beverages. Most species within Charted Space eat largely compatible foodstuffs which include proteins, carbohydrates, fats, vitamins, and other micro-nutrients. Cuisines vary with each world: tastes, metabolisms, and preparation techniques abound and depend on a spectrum of differences ranging down to trace nutrient availability.
However, a few species have unconventional or even exotic biochemistries and require food of different varieties, sometimes organic materials with different chirality, chemical composition, pH acidity, or even variations of the basic substances of life.
The items noted as "(nutriment)" are the lightly processed food from the corresponding plant or animal. In other cases, the agricultural derivative of specific plants or animals is given a unique name.

Agadua is a plant native to Antioch (Dagudashaag 1117). The tuberous portion of the plant can be ground into a sweet flour. The Agadua flour is considered a favorite dessert throughout the Core regions of the Third Imperium.

Akanarzh

Akanarzh is a dish, beloved of the Vargr peoples and consists primarily of raw, fermented meat. The dish is made from finely chopped meat, which is mixed with a carbohydrate base, spice-pods, and seasonings. The meat is packed into a rectangular dish, lined with aromatic leaves, covered with more leaves, weighted, and left to ferment for thirty days or so. After this time, the meat is unwrapped, cut into thick slices and either flash-fried, lightly grilled, or served cold. The Akanarzh dish is native to Lair (Provence 2402).

A fibrous tuber native to Vland (Vland 1717) almost entirely carbohydrate. Argu is one of the few Vilani foodstuffs that requires only soaking and boiling to be rendered digestible. Because of the simplicity of the preparation it is one of the first food preparation techniques taught to Shugilii apprentices. Usually the preparation has a nutty flavor due to the remaining traces of incompatible proteins. Only the best Shugilii can make a completely flavorless Argu.

Arkhaala is a dessert, belonging to Vland sector haute cuisine that consists of a small bowl or basket, formed of braided, crisp-baked, dough straws. The bowl contains sweet fruit jelly, which is applied with a spray bottle, layer on layer, until a thin layer is formed on the inside of the bowl. This jelly serves to keep a sour-sweet cold mousse inside the bowl. A layer of sugared fruit is then arranged on top of the mousse.
Not entirely Vilani in principle, this sweet is much inspired by Solomani desserts. Nonetheless, Arkhaala is rarely found outside Vland Sector.

One of the main seasonal crops on Chandra's World (Dagudashaag 2122). Ayau is used as a flour substitute by humans; however, a certain strain, Rea Ayau, was recently found to bring on psychotic schizophrenia and act like a combat drug on Aslan. So far, no conclusive evidence has surfaced as to why this strain should affect Aslan in this way.

A bio-engineered artificial organism, the bio-still is a genetically-engineered life-form, which will eat organic garbage and excrete alcohol. The bio-still appears as a roughly egg-shaped body, 900mm high and 600mm wide, with a mouth on top and a pair of stout feet on the bottom. The still has a nipple on its front, from which the alcohol is drawn. The bio-still stands still for most of the day, however it will occasionally shuffle its feet and jiggle around. The still can produce around 40 litres of liquid every 5 days. The process of fermentation takes 5 days, after which time the alcoholic liquid can be drawn off via the nipple. The alcoholic fluid is around 14% ethanol by volume. It is essentially tasteless and needs to be flavoured with wine, beer, cider or mixed-drink flavouring. Bio-stills are illegal on a few worlds and are viewed with suspicion on many others.

Davizi Maize is a common grain crop grown primarily within the Ziadd sphere of influence. It is extremely adaptable and can cope with a wide variety of climates and planetary temperatures. The seed pods of the Davizi maize are generally either boiled and eaten whole or ground into a flour.
The seeds can also be used in the manufacture of a pungent local beer brewed throughout the Zeda Alignment. The bittersweet taste is thoroughly enjoyed by Ziadd but few other races can bear to put up with its smell for long enough to actually try it.

Deep Caviar are the eggs produced by a large ocean-dwelling fish locally referred to as a Leviathan, and referred to the greater interstellar society as Jenghean Leviathan, found in the depths beyond the continental shelf of Jenghe (Spinward Marches 1810).
The surface of Jenghe is mostly ocean with small island communities which depend on commercial fishing as their main export. Leviathan produce eggs four times per year and a fully mature female can have as much as 60 liters within her egg producing organs if harvested correctly.
The harvest and export of Leviathan parts to include the egg are regulated by the planetary government. The semi-strict regulation prevents over harvesting and drives up the export market. Luxury restaurants on Regina are famous for high end deep caviar imported from Jenghe. It is not uncommon for a liter of eggs purchased at dockside on Jenghe for 10 credits to sell on Regina (Spinward Marches 1910) for 5 to 10 times that amount.

The sandwiches are sold unmarked as to the specific contents, originally a production accident, and latterly employed as a marketing angle, these sandwiches have become a staple of many Imperial quartermaster's supplies.

Fiwai'al is a much sought-after and expensive plant-based oil used both for cooking and for the manufacture of perfumes.
Derived from a plant grown only on Aslan world of Hroilr (Dark Nebula 1536), which is controlled by the Keiouwyaouryakh Clan. Keiouwyaouryakh closely guards the secret of the art and science of cultivating the Fiwai'al plant and the methods used to refine Fiwai'al as a spice and how to distill Fiwai'al essence for use in perfumery.
It is rarely sold outside the Hierate, since humans find its smell unattractive and it is toxic when taken internally by Humans. Some Solomani Humans have remarked that Fiwai'al perfume smells like panther piss.
Fiwai'al often commands a price equivalent to Cr1.0 per gram. Short-term fluctuations in Hierate stock markets often drive Fiwai'al product prices sky-high, and the long-term price patterns of Fiwai'al commodities are notoriously hard to predict.

Graymalk is the staple crop of Khalan (Dagudashaag 2007). This is a genetically altered grain specifically suited to that worlds ecosystems and edible by Humaniti. The pollen provokes a strong allergic reaction in most humans, though there are simple and inexpensive allergen treatments available.

The jungle floor region of Kimalad (Dagudashaag 1506) continues to be undeveloped and is home to the Ishupkura, a large grazing beast which is capable of growing up to 2 tonnes in weight. Ishupkura is prized for its meat, which has a pleasant nutty flavour. Levies (short for "leviathans") are immense creatures, massing up to 100 tons, which live deep in the ocean depths of Skye (Reaver's Deep 2018). Leviemeat is a popular foodstuff, harvested from great these great creatures.
The Levies are hunted from small, six-man submarines, killed, and brought to the surface by the attachment of large airbags secured by divers. It is dangerous work, both for the sub. for a flick of a levie's tail has been known to wipe out a sub and its crew, and for the divers, who must go outside the sub and risk encounters with several large scavengers which often contest a levie kill.

Pogi is a rice-like grain crop developed through years of selective breeding on Larmai (Dagudashaag 3016). During the First Imperium this crop was extensively exported to worlds throughout the Subsector. In the early part of the Long Night, the harvest failed and the rotting crops released huge volumes of methane and hydrogen sulphide and the atmosphere became tainted and difficult to breathe. The world's ecology still has not yet recovered.

Ration
Rations are a variety of processed, packaged, and preserved foods. Originally produced to supply armies with necessary food for military campaigns, various rations are also supplied with survival kits, sold to campers and explorers. Rations forgo palatability for portability and duration of edibility. Weight and cost for rations are per person-day of food.

In the 800s a Droyne Sport, visiting Terra (Solomani Rim 1827) on a diplomatic mission, discovered Black Beetles. Delighted by their crunchiness and flavor (especially when roasted) he arranged to import some to Droyne communities in the Spinward Marches where they turned out to be very popular. His oytrip has been importing them ever since (though imports are sometimes sporadic and always in small numbers given the distances involved). They are a popular delicacy among the Droyne.

Shifu a common aquatic life form of Nuaimy/Oasis (Zarushagar 3224), and prized for its fine taste and multitude of uses in local foods. Exporting Shifu is made difficult by environmental constraints on moisture and temperature, but these are not impossible to overcome.
Depending on the distance from Nuaimy, Shifu can cost anywhere from 2-3Cr to 10Cr per kilo (the average example weighing approximately 40-50kg.).

Skymelons are a pungent, sharp-tasting fruit grown on Pysadi (Spinward Marches 3008) and have a light blue interior color, hence the name.
The skymelon grows on vines which co-exist with trees; the fruit appears in the upper reaches of the branches, making it difficult to harvest. Many farms have induced the vines to grow instead on trellises with overhead catwalks to facilitate harvesting.

Each SnakTube contains a chemical heating element inside the caddy. To operate a SnakTube, a small tab is broken off the top surface of the caddy. After 30 seconds, the caddy emits a loud clicking sound and the lid separates from the caddy. The food can then be removed from the caddy or eaten straight from the container, using the spoon provided.
SnakTubes come in twenty-four different varieties, including fol ragout with purée of potato, Terran noodles, with sautéed chicken and mushrooms, Lanceshark and cheese dumplings in tomato broth, namako and pork paella, lentil and Leviemeat soup with croutons, and duck and sausage gumbo, with white rice.

A line of 'CampTubes' is also available. They are dehydrated, ultra-lightweight versions of regular SnakTubes, available in eight different varieties. These CampTubes require added water and two minutes standing time. The CampTube caddy features a small sphincter valve on the top, which changes colour when enough water is added.
LeHatte Foods and Plastics are well known for their convenience foods, and the SnakTube is one of their more popular lines. The SnakTube was originally aimed at students and other young people in its advertising campaigns, but now becoming very popular with adults and young couples.

The Logan Subsistence Company of Garda-Vilis (Spinward Marches 1118) is proud to announce the introduction of its new line of Survival Food Ration, a compact, long-lasting ration.
The unopened chocolate-based ration weighs 600 grams in a resealable plastic container which can double as a cup and water container and is priced at 5 Imperial Credits per survival packet. The multi-use packet and the Vargr hard biscuit packets weight 750 grams in a resealable plastic box, and costs 6 Imperial Credits per ration packet.
The primary component of each ration packet is four 125 gram individually wrapped bars, with each bar providing 600 calories and a balanced portion of the required vitamins and minerals required for the typical human. Included with the four bars are three powdered drink packets supplying Vitamin C in a highly palatable form when mixed with a half-liter of water, and a supplementary vitamin tablet in addition to the vitamins contained in the bars to ensure an adequate vitamin intake. The bars are composed of a mixture of chocolate, dehydrated milk powder, and grains, stabilized to tolerate elevated temperatures, and if desired, can be used to produce a chocolate drink by dissolving the bar in warm water. The four bars together supply sufficient calories to sustain the average size human for one day of moderate activity.
A multi-use bar for both humans and Vargr is similar in packaging and weight, with the primary difference being the use of powdered dried meat instead of the chocolate and additional use of animal fats in the formulation. These bars also supply 600 calories per bar and are palatable to both humans and Vargr. The supplementary beverage packets contain both the Vitamin C fortified beverage packets and three additional packets of powdered meat broth enriched with salt for the use of the Vargr, although humans also find the broth nourishing and palatable. Two vitamin tablets are provided, one for Vargr use and one for human consumption.
A special Vargr only ration packet is available containing four 150-gram hard biscuits containing a total of 2400 calories and a balanced vitamin and mineral intake without the need of supplementary tablets or beverage packets. The four biscuits are individually wrapped in waterproof packets and may be carried easily in the pocket. This packet would not be suitable for human use, however, except in an emergency.
Logan Subsistence is in the process of testing the ration packets for use by the Droyne and whether a supplemental vitamin will be needed. It appears that both the chocolate-based human bar and the meat-based multi-use bar are suitable for Droyne use as well, with a preference being shown for the chocolate-based bar. Further testing is proceeding, and Logan Subsistence is committed to supplying the highest quality of survival food products to the widest number of consumers for competitive prices.

The people of Kirusis (Dagudashaag 0926), members of a company installation abandoned on the world at the start of the Long Night adapted to their new world. Their primary diet was the flesh of the Suungriaal, a large 250kg walrus-like creature native to the planet. Its meat was eaten raw, its skin provided insulated clothing and its bones were used for manufacturing weapons and transport, while the blubber was used as fuel.

The Trake is a small berry common to many worlds of the Imperium. It has a meaty, sweet body enclosing a single large seed and grows on a low, thorny bush. Trakes have been grown in the Imperial core since the time of the First Imperium.
Introduced late to the Spinward Marches Sector, they have flourished on only a few worlds, notably Pysadi (Spinward Marches 3008) and Alell (Spinward Marches 1706), although they are cultivated on many others.
In addition to being eaten, the berry can be use to produce Atrake, a fruity wine.

There are many main ingredients; Vilnafkus may be prepared with or without meat although Vilnafku with meat is traditional. Additionally a wide variety of vegetables may be incorporated, which may be more or less heavily spiced and seasoned.
The folded, edible leaf can also come from many different plants and even worlds of the Ziru Sirka. The Vilani have resisted making Vilnafku with non-Vilani ingredients, although such non-Vilani ingredient usage is tolerated when no other options exist.
Background and history
Vilnafkus have been made since ancient Vilani times. A Vilnafku was one of the Shugilii's favorite dishes and ways of transforming raw food into edible food. Proper Vilnafku uses a variety of traditional methods of chemical treatments and special aging techniques. Almost every Vilani family, and at one time every individual Shugilii, has a different set of Vilnafku using slightly different ingredients, recipes, chemical treatments, and special aging techniques.
Vilnafku is one of the national dishes of the Vilani and a symbol of the Ziru Sirka.
Terrans tend to compare vilnafku to Greek dolmadas or Italian lasagna. Only some vilani vilnafku is layered like a lasagna.
Commodity data
Vilnafku is inexpensive to prepare, and easily preserved for sale using a variety of methods (...freezing, pickling, canning, vacuum packing, irradiation, freeze-drying, etc.). As such, Vilnafku is not a significant commodity.
Stocks for food manufacturers are sold rather than specific preparers of Vilnafku. The Vilani prefer their Vilnafku home-made anyway.

Z'zezishz is a Vargr dish native to Lair (Provence 2402). Z'zezishz is a layered casserole of boiled, puréed yam or potato, with meat drippings and fat beaten in, layered with thick, highly seasoned meat gravy and sautéed, finely diced vegetables.
To prepare the dish, a layer of purée is laid in a greased casserole dish, followed by a layer of gravy, followed with a layer of purée, then a layer of mirepoix, and so on, with a final layer of purée on top. The top of the purée is marked with a fork or other, similar implement, brushed generously with melted butter or fat, and topped with a layer of crisp-fried, granulated, dried meat or chopped, sautéed bacon.
The dish is always heavily salted and laced with pepper or some other hot spice. Z'zezishz is usually accompanied with herbed Vargr crisp-bread.
