A dish, beloved of the Grushkargh peoples, akanarzh is raw, fermented meat-loaf. The dish is made from finely chopped meat, which is mixed with spice pods and seasonings. The meat is packed into a rectangular earthenware dish, lined with aromatic leaves, covered with more leaves, weighted with stones and left to rot for 30 days or so, After this time, the meat is unwrapped, cut into thick slices and flash-fried or lightly grilled.
